Different wheat flours 

Wheat flours differ vastly between baking processes and are very dependent on the end product required, which can include anything from bread, rolls, cakes and pastries.

“Wheat is often referred to as clean, white, or brown/hard, while the more common wheat flour varieties are wholegrain, brown bread, white bread, wheat germ and cake flours,” says Billy Oosthuizen, Managing Director, Foodcorp Milling.

Wheat that is traditionally known as ‘hard’ tends to have high gluten content and is most often used in bread wheat flour, while wholegrain wheat flour on the other hand, has over the past few years become more popular because of the move away from highly refined foods to healthier alternatives.

“It’s important to understand the differences in wheat flour because the chosen product will have an impact on the end result of the baked good,” says Billy.

For instance, the most commonly used white bread wheat flour is perfect for producing baked products which require lighter colours, strong proteins and good volume. Cake wheat flour on the other hand is highly refined and providing an exceptionally whiter colour than other wheat flours.

“Above all, consistency must be maintained by any miller for it is the consistency of the wheat flour, month after month, year after year, that results in predictable yields for commercial bakeries, which is an essential key ingredient for any successful business,” he says.
