Apple and Cinnamon Muffins with a crunchy brown-sugar topping

Ingredients
1 1/2 cups (375ml) All-Bran Flakes
1 1/2 cups (220g) Self-Raising Flour
1 Cup (250g) Brown Sugar
1 Cup (250ml) Grated Apple
1 1/2 Cups (125ml) Westfalia Natural Avocado Oil
2 Extra-large Eggs
1 Tbsp (15ml) Vanilla Essence
1 Tsp (5ml) cinnamon
Topping:
1/2 Cup (125g) Dark Brown Sugar
1/2 Cup (125ml) Sunflower Seeds
Makes 24 muffins
Preheat oven to 190C
Line 2 muffin pans with paper cases.
Mix together all muffin ingredients - do not over-mix batter.
Divide batter between muffin cases.
Mix together sugar and sunflower seeds, sprinkle a little over each muffin.
Bake for 20 - 30 minutes or until risen and cooked through.
