Chinese-style stir-fry

Avacado oil is rich in monounsaturated fat and has the highest smoke point of all oils making it less prone to damage and the formation of trans fats.
Westfalia’s range offers a healthy, delicious alternative to everyday food preparation. Avocado Oil is made only from locally-grown, choicequality avocados. Westfalia’s Avocado Oils are cholesterol free, contain mono-unsaturated fatty acids (the good fats), as well as anti-oxidants such as vitamin E and Omegas 3, 6 and 9. The smoke point for Avocado oil is approximately 250 degrees, which is much higher than olive oil, yet just as healthy!
This vegetarian and vegan Chinese-style vegetable stir-fry is low in fat and is quite easy to prepare.
Ingredients:
• 1 tbsp Westfalia Premium Avocado oil
• 1 slice ginger, minced
• 2 cloves garlic, minced
• 1/4 cup water
• 1/4 cup soy sauce – reduced sodium
• 1 cup broccoli, chopped
• 2 tablespoons chopped almonds or cashews
• 2 teaspoons sesame seeds
• 1/3 cup julienne carrots
• 1/2 cup bean sprouts
• 200g firm tofu cut into blocks
Preparation:
Heat the oil in a large skillet, wok or frying pan. Sautee the ginger and garlic for 2-3 minutes. Carefully add the water, soy sauce and broccoli. Stir-fry for 5-7 minutes, then add the remaining
ingredients. Stir-fry for another 5 minutes, until vegetables are cooked. Serve over brown basmati rice or quinoa if desired and enjoy! Serves 2.
