Butter Bean and Mushroom Soup

Serves 4
Soup is one of the easiest meals to prepare in a short amount of time. This one is nice and filling.
40g butter
10g leeks, chopped
2 garlic cloves, finely chopped
60ml chopped parsley
500g brown mushrooms, coarsely chopped
2 tins (410g each) Rhodes Butter Beans
About 500ml chicken stock
40ml brandy
Salt and freshly ground black pepper
Heat the butter in a saucepan and fry the leeks and garlic for several minutes. Add the parsley and mushrooms and fry for about 5 minutes. Add the butter beans, chicken stock and brandy and bring to the boil. Use a stick blender to create a smooth soup. Simmer for a few minutes and serve with freshly baked bread.
TIPS
* Brown mushrooms have more flavour and texture than white mushrooms. Use a variety of different mushrooms if you prefer.
* If the soup is too thick, add another cup or two of stock to thin it down.
