French Toast with Strawberry Jam

Serves 4
French toast is ideal for breakfast or even a decadent supper. Use any type of white bread.
125g bacon strips
4-6 eggs, beaten
Salt and pepper
60g butter
4 slices of white bread (2cm each)
Rhodes Strawberry Jam
100g mature Cheddar cheese, grated
Heat a pan and fry the bacon until crisp. Remove from the pan and place on a piece of kitchen towel. Season the egg with salt and pepper and pour into a flat bowl or deep plate. Heat the butter in the pan you used to fry the bacon. Dip the bread into the egg and fry the toast until golden brown and done on both sides. Repeat the process until all the bread has been used. Spread the French toast with strawberry jam and arrange the cheese and bacon on top of the toast.
TIPS
* Allow the eggs to reach room temperature as they will beat better than cold eggs.
* Replace the Rhodes Strawberry Jam with Rhodes Fig Jam.
