Seafood in Tasty Tomato Sauce

Serves 2
Cook your favourite seafood in this flavourful sauce, including a mixture of line fish and shell fish. We used calamari rings and mussels.
Tomato sauce
15ml (1 Tbsp) oil
1 onion, grated
2 garlic cloves, finely chopped
1 bay leaf
3ml (1/2t) dried oreganum
5ml (1t) paprika
60ml (1/4 cup) dry white wine
juice of 1 lemon
salt and freshly ground black pepper, to taste
2 tins (410g each) Rhodes Tomato Purée
500g calamari rings
250g mussels, shelled
Heat the oil in a pan and fry the onions, garlic, bay leaf and oreganum until the onion is soft. Add the paprika, wine, lemon juice, flavourings and tomato purée and heat to boiling point. Simmer for about 15 minutes until the sauce is thick and tasty. Add the sea food and simmer for a further 3-4 minutes or until cooked. Serve warm on noodles or rice.
TIPS
* Turn the recipe into a delicious seafood soup by adding 750ml (3 cups) fish stock and a handful of chopped fresh parsley to the tomato base. Then add small cubes of line fish, crab sticks and a few shelled prawn tails.
* Give this dish a Mediterranean flavour by adding several depipped olives and sliced green pepper to the onions while frying.
